Making Cheese With The Etruscan

Morning Cheesemaking Workshop At The Farm

Sneaking away from the chaos of the Imperial Rome we head to the shore of the Tyrrhenian Sea, to visit a farm near the ancient town of Tarquinia.

Here, with the help of local farmers, we ‘familiarize’ with the animals that provide the essential element of our activity of the day: fresh white pure MILK.

Following the instructions of an expert ‘casaro’ (cheese-maker), by re-producing gestures and rhythms of our ancestors, we experience the magic of creating ‘ricotta’ and ‘primo sale’ cheese from raw milk.

Depending on the period of the year, we can learn others typical Italian arts such as Making Pasta, Baking Bread in wood oven or making Fruits Preserves.

As a reward for our hard work we treat ourselves with a lunch based on local dishes and specialities (starters, main courses, side dishes, dessert and drinks…..all included).

Afternoon Guided Tour To Etruscan Necropolis And Museum

The last three kings of Rome (616-509 B.C.), before the Repubblica period, are known as Tarquini. They were Etruscans from Tarquinia.

Here, we have the chance to visit the largest ancient necropolis in the Mediterranean area, world’s heritage site and superb witness of the Etruscan culture. Together we experience the thrill of descending into tombs frescoed over 2000 years ago..

A fascinating path through the historic centre of the old town led us to the National Archaeological Etruscan Museum housed in the rooms of Palazzo Vitelleschi. Its famous collection of pottery and jewellery tells us how those mysterious people lived, loved and…died.

End Of The Day

We head back to our hotel,  but we are no longer the same. Today, we have made cheese, pasta and bread with our hands, in the same way our ancestors did ages ago. We have built a link with the past and thus discovered  how connected our lives are.
